Easy vegan apple cake

It's apple season! So what better way to utilise them than by making a vegan apple cake. It tastes amazing and the combination of apples and cinnamon is heavenly. The best is it's super easy to make, even if you have never baked before. All ingredients are available in your local supermarket. Preparations should only take 10-15 minutes. The perfect cake to have with coffee!


I've been a big fan of apples since I was a little boy. My late granny swore by apples and praised their nutritional value. She even had a few apple trees in her garden. I loved going over to hers and picking apples direcly from the trees. She also made lots of sweet apple dishes. Like battered apples, apple fritters apple compote and of course apple cakes (my mouth is watering writing this).


So I wanted to continue the tradition and I came up with my own version of a vegan apple cake. It's apple season now in autumn, but I think it's a cake that can be eaten all year round. It doesn't feel to heavy, it fluffy, yet moist and it doesn't need any cream on the side. I baked it for a client meeting the other day and everyone loved it.

This is a great cake to have with coffee. I actually made it for a client meeting and brought it into the office.
Everyone loved it. I had to fight for a piece!

If you want this vegan apple cake to have more apple in it then cut thinner slices and arrange them in another star shape in the middle.

INGREDIENTS VEGAN APPLE CAKE:


Dry ingredients:

  • 200g self-raising flour
  • 100g brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon powder

Wet ingredients:

  • 150ml dairy-free milk
  • 75ml sunflower oil
  • 1 1/2 tsp vanilla essence
  • 1 tbsp apple cider vinegar

Other ingredients:

  • 2 apples
  • Vegan butter to grease the baking tin
  • Icing sugar

METHOD:


Preheat your oven to 180C (360F).


In a large bowl mix together all dry ingredients.


The take a measuring cup and add all wet ingredients.

Stir and mix with a spoon.


Using a hand mixer mix the dry ingredients and then pour the wet ingredients and mix together well until you get a smooth batter. If you don't have a hand mixer you can also use a whisk for it.


Line a baking tin with baking paper and then grease the sides with vegan butter. This is to make sure the cake doesn't stick to the tin.


Pour the batter into the cake tin and spread evenly.


Peel two apples, remove the seeds and cut each into 8 slices.


Now place the apple slices on the batter in a star shape.


Bake the cake in the preheated oven for 35 minutes.


Let cool down and then sprinkle some icing sugar (and optional cinnamon) on top.
