Veggie baguette with sunflower lemon & garlic creme

I wanted to make something super quick and healthy for people that's not only delicious, full of protein but also doesn't cost the earth and people with nut-allergy can have. So I used sunflower seeds to create a super easy and yummy sunflower lemon & garlic creme. Add a few veggies on top, put in the oven and done!

This recipe is perfect when you don't have a lot of time during the week but are still looking for a healthy and delicious dinner without much of a hassle.

INGREDIENTS:


Sunflower lemon & garlic creme ingredients:

  • 75g sunflower seeds
  • 1/2 cup of water
  • 1 1/2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/3 tsp garlic powder
  • 1/2 tsp Herbs de Provence

Other ingredients:

  • 2 tomatoes
  • 1 courgette
  • 1 small baguette

METHOD:


Add all sunflower lemon & garlic creme ingredients into a blender and blend until you get a smooth creme. Sunflower seeds are much harder to blend, so if your blender isn't the best and the creme isn't totally smooth that's ok as well, it will still taste delicious.


Cut a small baguette in half and spread the creme on it.

Then add sliced tomatoes and courgette slices on top.

Add a dash of salt for extra seasoning, some black pepper and finish off with a dash of olive oil.


Bake in the preheated oven at 200C (390F) for 20min.
