Deliciously easy microwave apple cake in a mug
It's super easy, all you need is a blender (unless you use 1 1/2 tsp of apple sauce instead of half an apple) and a microwave. All ingredients should be easily found in your local supermarket.
I tried to make a few vegan microwave mug cakes before but this one is the best I had so far. The only difference to a normal cake is that the texture is a bit different and it's more dense. However, the flavour is still delicous.
I could just bury myself in apples, I loved them since I was a child and for me they are always in season. An apple a day is what keeps the doctor away from me indeed hehe. And it brings me back to the apple trees my granny had in her garden. It's so different when you have the priviledge to grow up around real fresh food.

That was quick! Less than 10 minute for this delicious little apple cake. Perfect for singles.
INGREDIENTS (1 cake in a mug):
Wet ingredients:
- 1 apple
- 1 tbsp vegetable oil
- 1 tbsp plant based milk
- 1/2 tsp lemon juice
- 1/2 tsp vanilla extract
Dry ingredients:
- 3 tbsp flour
- 1 1/2 tbsp brown sugar
- 1/2 tsp cinnamon powder
- 1/4 tsp baking powder
Other ingredients:
- Icing sugar
METHOD:
Deseed an apple and cut chop finely. Add half of the chopped apple and all other wet ingredients to a blender and blend until smooth.
In a bowl combine all dry ingredients, and then mix in the wet ingredients and the other half chopped apple pieces.
Pour mixture into a cup or mug and heat up in the microwave. It took 1.5 minutes in my microwave. But I would recommend you to heat up for 1 minute first, check and if necessary keep heating up in 15 second increments.
When done sprinkle some icing sugar and cinnamon on top. Enjoy!
