Easy apple and almond cupcakes - vegan

I am actually not even a big fan of cupcakes because of the huge amount of frosting they normally have sitting on top. But my apple and almond cupcakes don't even need anything else. They are both light, fluffy and moist at the same time, especially with the apple slice in the middle.
I think this is also a brilliant base recipe for other cakes. I actually had some batter left over and I made a cake with it. But the advantage with cupcakes is that they are super quick to bake (20 min.) and you can eat them almost as soon as they come out of the oven. Whereas cakes take a long time to cool down.

The apple slice in the middle prevents them from being dry and adds extra flavour as well. So you don't need any frosting, which makes these cupcakes more healthy.

INGREDIENTS (12 cupcakes):
Step 1 – dry ingredients:
- 250g flour
- 200g brown sugar
- 100g ground almonds/almond flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Step 2 – wet ingredients:
- 200ml plant-based milk
- 120ml sunflower oil
- 1 tbsp apple cider vinegar
- 2 tsp almond extract
- 1 tsp vanilla extract
Step 3:
- 3 apples
Step 4:
- cupcake paper moulds
Optional:
- Mint leaves for decoration
METHOD:
Step 1:
Add all dry ingredients to a bowl
Step 2:
Add all wet ingredients to a bowl.
Mix well with a spatula or a wooden spoon until you get a smooth batter.
Step 3:
Deseed and peel 3 apples (sorry, it said 2 apples in the video, but it should be 3 - if you only have 2, then you can also cut the apples into smaller slices). Then cut each apple into 8 slices.
Step 4:
Spoon the batter into cupcake moulds (only half full, because the batter will rise). Then place an apple slice into each cupcake.
Bake in the preheated oven at 180C (360F) for 20 min.
Let cool down and dust with icing sugar. If you have kids you can tell them you are making it snow ;-) Decorate them with an optional mint leaf. Enjoy!
