This vegan cake recipe took me quite a few attempts to get right but I am super proud of it now! The flavours work togethe just perfectly!
Drizzle this cake with chocolate sauce. You can be creative when choosing a pattern! Why don't you add a smiley to it? I should've done that ;-)
I am really proud of this recipe, it's so delicious! It takes a bit longer than my other recipes but it's still easy enough for a complete kitchen novice.
Let me know what you think of my new recipe in the comments please.
INGREDIENTS:
Step 1 dry ingredients:
- 150g self-raising flour
- 80g caster sugar
- 3/4 tsp baking powder
Step 2 wet ingredients:
- 100ml dairy-free milk
- 50ml sunflower oil
- 1 1/2 tsp vanilla essence
- 2 tsp rum
- 1 tbsp apple cider vinegar
Step 3:
- 4 Bananas
Step 4 custard:
- 900ml plant-based milk
- 100g caster sugar
- 75g corn starch
- 4 tsp vanilla essence
- 1 pinch of turmeric for colour (optional)
Step 5 Chocolate drizzle:
- 50g cooking chocolate
- 2 tsp sunflower oil
METHOD:
Step 1:
Mix together all dry ingredients.
Step 2:
Add wet ingredients to dry ingredients and mix together until you get a smooth batter without lumpgs.
Pour the batter into a greased baking dish (grease either with vegan butter or sunflower oil).
Bake in the preheated oven at 180C (360F) for 20 min.
Step 3:
Peel about 4 bananas and cut in half. Place them on top of the cake. Don't worry if the cake is still hot, there is no need to let it cool down.
Step 4:
To make the vegan custard blend all ingredients in this step (or you can whisk them as well, as long as there are no lumps). And then heat up in a pan until the starch gelatinises and you get a nice custard consistency. You don't have to add turmeric if you don't want to. I purely added it for the colour and admittedly added a bit too much of it so you could taste it in the cake. So do as I say and not as I do and add only a tiny amount of turmeric, not 1/3 spoon like in my video. Tastewise it wasn't a problem but it would've been just a bit better without the hint of turmeric taste ;-)
Pour the custard on the cake and cover the bananas with it.
Step 5:
Add 50c cooking chocolate to a bowl and add 2 tsp sunflower oil (this will make the chocolate more smooth and prevents it from going hard again when it cools down). Microwave for about 1.5 min and then mix with a spoon until you get a smooth chocolate sauce.
Drizzle the sauce over the custard in a pattern of your choice, You can also make twice the amount of the chocolate sauce and fully cover the cake if you like.
Let set for about 2 hours or so in a cool place.
Enjoy this slice of banana custard heaven! ;-)
