Sweet strawberry dumplings
Austria is all about cakes and desserts. So much so that we even serve sweet dumplings as a main meal! I know, crazy, right! These dumplings can be adapted to different seasons because you can also fill these with apricots and plums! Both are super delicious!

This recipe is so refreshing and delicious, if you love strawberries you will love this recipe!

Dust these strawberry dumplings with a generous amount of icing sugar and enjoy.

These delicious treats taste best when served warm, but you can always eat them cold if you like. Just don't chill them in the fridge too long because the breadcrumbs will go stale and soft.
INGREDIENTS (6 dumplings):
Step 1 Vegan dumpling ingredients:
- 80g white flour
- 50g semolina
- 100g soy yoghurt
- 40g vegan butter
- Sprinkle of salt
Step 2 filling ingredients:
- 6 large strawberries
Step 3 other ingredients:
- 50g breadcrumbs
- 5g brown sugar Icing sugar
METHOD:
Step 1:
Mix together all ingredients from step 1 until you get a nice dough.
Step 2:
Cut off the green bits and the tip of the strawberries, so they have more of a round shape. This will help to encase them better in the dumpling dough.
Take 1/6 of the dough and form a ball with it. Then flatten the ball, insert 1 strawberry and encase in the dough. Form a nice round ball and repeat until you get 6 dumplings. Use just enough dough to cover them.
Boil water in a large pan and cook the dumplings for 15 min at medium heat.
Step 3:
While they are cooking toast the breadcrumbs together with brown sugar in a pan until nice and crispy.
When the dumplings have finished cooking, take them out and roll them in the crispy sweet bread crumbs (no need to pat them dry, when they are wet the breadcrumbs will stick better).
Dust them with a generous amount of icing sugar and serve. Enjoy!
Tip:
if you want your dumplings to taste even sweeter you can also chop them in half, add a super cube in the middle and then close them again before encasing them in the dough.
