Only 5 ingredients and super quick to make yourself, no chef skills required. This is one of my favourites as the flavours work together so well.

  • 1/2 can of coconut milk
  • 7 Medjool dates
  • 2 small bananas
  • juice of 1/2 a lime (maybe a bit more, do a taste test)
  • 125ml of any plant milk (e.g. soy milk)

Blend the bananas with the plant milk, lime juice and dates until you get a smooth texture. Pour it into a bowl and add 1/2 a can of coconut milk and combine well. Transfer the mixture into a shallow tupperware dish. Don't fill it up too high (only up to 3cm from the bottom) as it will make it harder to get the ice cream out of the dish. You might have to use two tupperware dishes. Freeze for at least 5 hours. When you take it out of the freezer and it's too hard to be scooped out give it a quick 30 seconds in the microwave to defrost it a bit - make sure you don't overdo it as you will otherwise end up with a banana smoothie. Serve with chocolate sprinkling or a chocolate mesh (find the recipe here). Enjoy!

And if you don't know what to do with the other 1/2 tin of coconut milk then why not try this soba noodle stir fry recipe. Super easy and delicous.

It's apple season! So what better way to utilise them than by making a vegan apple cake. It tastes amazing and the combination of apples and cinnamon is heavenly. The best is it's super easy to make, even if you have never baked before. All ingredients are available in your local supermarket. Preparations should only take 10-15 minutes. The perfect cake to have with coffee!

Vegan Halloween cupcakes with custard brains and cherry blood

I've been looking forward to making something vegan for Halloween for ages! And I brainstormed (pardon the pun) over and over again until I came up with the idea to make vegan brain cupcakes. It was so much fun, they tasted amazing and will definitely a talking point at any party they are served.

Vegan apple strudel with vegan home-made custard

Coming from Austria I also share a big fondness for the former emperor's favourite dessert, Viennese apple strudel. In Austria we have it on it's own but here in England they serve it with custard which is a heavenly combination. So I came up with a vegan apple strudel version and a delicious and easy home-made vegan custard. From preparations to finish this dessert can be made within 30 minutes! What are you waiting for?
