Vegan banana ice cream

With only 5 ingredients and no need to churn this ice cream is super quick and easy to make and simply divine.

If you always wanted to make your own delicious ice cream but didn’t have an ice cream maker or thought it’s a complicated and laborious process then this recipe is perfect for you! Only 5 ingredients and super quick to make yourself, no chef skills required. This is one of my favourites as the flavours work together so well.

INGREDIENT:

  • 1/2 can of coconut milk
  • 7 Medjool dates
  • 2 small bananas
  • juice of 1/2 a lime (maybe a bit more, do a taste test)
  • 125ml of any plant milk (e.g. soy milk)

METHOD:

Blend the bananas with the plant milk, lime juice and dates until you get a smooth texture. Pour it into a bowl and add 1/2 a can of coconut milk and combine well. Transfer the mixture into a shallow tupperware dish. Don't fill it up too high (only up to 3cm from the bottom) as it will make it harder to get the ice cream out of the dish. You might have to use two tupperware dishes. Freeze for at least 5 hours. When you take it out of the freezer and it's too hard to be scooped out give it a quick 30 seconds in the microwave to defrost it a bit - make sure you don't overdo it as you will otherwise end up with a banana smoothie. Serve with chocolate sprinkling or a chocolate mesh (find the recipe here). Enjoy!
