Vegan banana spring rolls

What a treat and so easy to make! And the ingredients list is really short as well!

This actually started as a bit of experiment with Mr Vegan UK. We were filming and I said let's try to make banana spring rolls. I had the ingredients at home (always prepared, I often find it hard to close my kitchen shelves). We had a lot of fun with it and even more fun eating them! Try those delicious vegan banana spring rolls for yourself, they taste amazing!

The banana spring rolls were so easy to make and tasted great with warm chocolate on top and ice cream on the side.

INGREDIENTS:

  • 2 bananas
  • Filo pastry
  • Cinnamon
  • Chocolate
  • Icing sugar
  • Sunflower oil
  • Vegan chocolate ice cream (optional but recommended)

METHOD:

Preheat your oven to 200C (390F). Depending on how big you would like your banana spring rolls, cut the banana into halves or thirds and then cut these pieces into halves again.


Roll out some filo pastry sheets (cut them to make them about 1/4 - 1/3 wider than the banana piece), put the add the banana and sprinkle some cinnamon on top.

Roll the banana up with the filo pastry sheets, wet the ends with a bit of water and fold the ends in. When done baste them with a bit of oil.


Put them into the oven for about 15 minutes.


In the meantime melt some chocolate in a bain marie.

When the spring rolls are done, sprinkle some icing sugar on top and then drizzle the melted chocolate over them. Serve with chocolate ice cream. Enjoy!
