Vegan carrot cake

This vegan carrot cake recipe is really easy, anyone could bake it, has no eggs, no dairy and is just delicious. I don't know why it took me so long to make this cake, especially since it looks like my logo.

INGREDIENT:

  • 400g grated carrots
  • 420g spelt flour or any other wholemeal flour
  • 200ml sunflower oil
  • 220g brown sugar
  • 1 tsp cinnamon
  • 3tsp baking powder (15g)
  • Contents of 1 vanilla pod or 1 tsp vanilla flavouring
  • Juice of 1 orange

METHOD:

Preheat the oven to 180C. Finely grate the carrots, add all other ingredients (scrape out the vanilla of a vanilla pod if you are using one, alternatively add 1tsp vanilla flavouring) and mix well. Grease a non-stick baking spring form (mine was 21cm) and add the mixture. Bake in the oven for about 45 minutes. Take it out of the oven, let it cool down and sprinkle some icing sugar on top.


I also made the marzipan myself. Just buy some in the shop, knead it with vegan food colouring, and create the shapes.
