Vegan chocolate and hazelnut cake - easy and delicious
If you like you can also decorate the cake with a chocolate mesh like the one I made some time ago. Have a look here. It's really easy to make.
Let me know in the comments how you liked the cake. And if there is another cake you would like me to veganise as well let me know. I am always up for a challenge!

The chocolate was still runny when I cut the cake.I loved the look of it. If you let it cool down for a bit the chocolate will set and won't be runny anymore.
Even though this cake is really easy to make it will impress with its looks.
Seeing how the chocolate flows over the edge of the cake is one of my favourite sights. It's so much fun to distribute the molten chocolate over the cake.
Tip: Add the physalis slightly off centre so it's easier to cut off the first piece of cake.
INGREDIENTS:
Dry ingredients step 1:
- 300g self-raising flour
- 150g brown sugar
- 150g ground roasted hazelnuts
- 30g corn starch
- 1 tsp baking powder
Wet ingredients step 2:
- 200ml soy milk
- 200ml sunflower oil
- 2 tsp vanilla extract
Ingredients step 3:
- 150g melted cooking chocolate
Ingredients step 4:
- Vegan butter to grease baking tin
Chocolate glazing ingredients step 5:
- 100g melted cooking chocolate
- 1 1/2 tsp sunflower oil
Optional ingredients:
- Physalis
- Hazelnuts
METHOD:
Preheat your oven to 180C (360F).
Step 1:
Combine all dry ingredients in a large bowl and mix together well so there are no lumps.
Step 2:
Then mix together all wet ingredients in another bowl
Step 3:
Combine wet and dry ingredients and quickly add melted cooking chocolate (you can either carefully melt it in the microwave or a bain marie). Mix well until you get a nice smooth batter
Step 4:
Line a baking tin with baking paper and then grease the sides with vegan butter. Pour in the batter and pat down to distrubute evenly.
Bake in the oven for 40 minutes.
Then take out and let cool down.
Step 5:
After the cake has cooled down completely mix together 100g of melted cooking chocolate and 1 1/2 tsp of sunflower oil.
Pour the chocolate glazing over the cake and distribute evenly. I love when I see the chocolate run over the edges of the cake, it's such a soothing sight.
Add a physalis and some hazelnuts for decoration. Enjoy!
