vegan matcha marzipan pancakes with chocolate sauce
So if you are looking for delicious vegan breakfast or dessert ideas look no further. When I made them I was actually on a diet but I couldn't help myself but finish them off. I am fascinated by the vibrancy of the green colour. And together with the marzipan and chocolate it becomes an irresistible treat. Let me know how you like them!

Make sure you dont' forget to drizzle the chocolat on top. You can be even more generous than me. I just didn't want to hide the amazing green colour of these pancakes, otherwise I would've drizzled much more chocolate on top hehe.
The marzipan filling is soft and light. I used 4 - 5 tbsp of icing sugar. But you can do a taste test to see how sweet you like it. The pancakes aren't sweetened though so the sweetness of the marzipan perfectly balances their taste.
It's so easy to make your own marzipan. Often store-bought one has egg in it. So you can use this super simple recipes for lots of other things. Even for vegan almond croissants! Check out my recipe here.

INGREDIENTS (3 pancakes):
Step 1 matcha crepes batter:
- 1 cup soy milk
- 3/4 cup plain flour
- 3 tsp matcha powder
- 1 tsp vanilla essence
Step 2 marzipan filling:
- 150g ground almonds/almond flour
- 4 to 5 tbsp icing sugar
- 1/2 cup water (60ml)
- 1 tbsp vegan butter
- 1 tbsp lemon juice
- 1 tsp almond extract
- 1 tsp vanilla extract
Step 3:
- Cooking chocolate
METHOD:
Step 1:
Add all batter ingredients into a food blender and blend until there are no lumps. For best results let it rest for 15 minutes.
Step 2:
Add all marzipan ingredient into a food processor and process for 2-3 minutes until nice and smooth.
Then grease a medium size pan, set to medium heat and pour the batter into it evently so it covers the bottom of the pan. Cook on both sides until the colour turns a darker green. If you are confident you can flip the pancakes, or just turn them with a large turner.
Then place the pancakes on a plate and scoop in the marzipan. Roll them in and cut them into halves (it looks better on a plate I find).
Step 3:
Melt some chocolate (cooking chocolate will do) either in a microwave or a bain marie and then drizzle over the pancakes. Enjoy! You know you will ;-)
