Vegan turmeric, orange and almond cake
Turmeric and orange feel like a very natural combination. And adding ground almonds you get another layer of flavour. It has a light marzipan taste as well. If you love marzipan as much as I do you will love this cake. And then for the bit of extra indulgent I smothered it in chocolate! What more could you want from a cake? This cake looks much more complicated than it actually is. Preparations only take around 15 minutes!
I really love the golden colour the turmeric gives this cake.
This vegan turmeric cake is so full of flavour you will love it.
This cake will impress anyone if you serve it at a house or dinner party.
INGREDIENTS:
Dry ingredients:
- 300g self-raising flour
- 120g sugar
- 100g ground almonds
- 30g corn starch
- 2 tsp turmeric
- 1 tsp baking powder
Wet ingredients:
- 250ml orange juice
- 200ml sunflower oil
- 2 tsp vanilla extract
- 1 tsp almond extract
Chocolate frosting:
- 200g dark cooking chocolate
- 1 1/2 tsp sunflower oil
Other ingredients (optional):
- Kumquats
- Crushed pistachios
METHOD:
Preheat your oven to 180C (360F).
Start with combining the dry ingredients in a large bowl first. Combine them well with a spoon.
Then take a separate bowl and mix together all wet ingredients. Stir.
Pour the wet ingredients into the bowl with the dry ingredients. Mix together well with a spoon until you get a smooth dough.
Line a baking tin with baking paper. Grease the sides with vegan butter.
Pour the cake dough into the tin and pat down with a spatula so it's all even.
Bake for 40 minutes.
Take out and let cool down.
When the cake has cooled down completely melt 200g dark cooking chocolate. You can do this by either using a bain marie or melt it in the microwave. Add a 1 1 /2 tsp sunflower oil and stir well.
Pour the chocolate over the cake and distribute evenly.
Add a few sliced kumquats or orange slices.
Throw some pistachios in a food blender for a few seconds or crush them using a and mortar and pestel.
Take a sheet of paper to cover parts of the cake and drizzle the pistachios on top. Decorate the cake to your own liking. Enjoy!
