- Chickpea flour (also galled gram flour)
- Garlic powder

Combine water, chickpea flour, turmeric (enough to give it a nice yellow colour but not too much as it can become a bit bitter), salt (don't be shy), garlic powder and a dash of pepper. Whisk until it becomes a batter similar to pancake consistency. You can either fry the batter now or chop the mushrooms, red pepper and onion ingredients finely and fry. Once done add them to the batter. Grease a large pan with olive oil and fry the batter on both sides (either flip the omelette or turn carefully with a wooden spatula. Make sure it is well cooked on both sides and serve with some soy joghurt and refreshing mixed salad.
