Shamrock avocado on toast - vegan St. Patrick's day brunch

If you don't have avocados you can also sprinkle some nutritional yeast on top. It tastes delicious!
This is the perfect brunch idea for St. Patrick's day. Your friends will love it.
Mashed avocado is always a classic for brunch. The creaminess of the avocado is the perfect sandwich topping.
- 1 green bell pepper (make sure the bottom has the shape of a shamrock)
- 1 ripe and soft avocado
- 1 lemon
Slice 1 green bell pepper (roughly 5mm thick) so you get a shamrock shape. Cut off the white bits on the inside. This is your mould.
Then cut an avocado in half. Deseed it and scoop out the flesh into a bowl. Add some lemon juice and salt to taste to it. You can also add fresh garlic as well. then mash it up until it's more or less smooth.
Cut a slice of bread and place the bell pepper slice on it. Then fill it with the mashed avocado. Even it out so you get a nice flat shamrock shape.
Add some pistachios to a blender cup and blend to crush them. Using a sheet of paper to create sharpe edges, sprinkle the pistachios on the shamrock crossways to accentuate the leaves.
Cut off a small piece of the green bell pepper and add it to the bread to create a stem. Done! Enjoy!
