Tofuscramble and spinach filled pittas with avocado

When I had my first tofu sandwich in Montréal it was so delicious that I wanted to make my own version of it as well. The perfect way to start your day and you can even take it with you.

INGREDIENTS (for 3 servings):

  • 1 leek or onion
  • 300g tofu (the medium firm one)
  • 1 tsp turmeric
  • 1 large tsp minced garlic
  • 2 tbsp nutritional yeast
  • 2 tsp soy sauce
  • Tabasco sauce (or pepper)
  • Extra virgin olive oil
  • 1 1/2 - 2 tsp kala namak salt (to taste)
  • Spinach
  • Pitta bread
  • 3 small avocado
  • Lemon juice
  • Salt

METHOD:

Slice the leak or onion finely and sauté in a pan with a bit of oil.


Take 300g of tofu and finely crumble with your hands (or put into a food processor, I do that normally out of laziness) and add to the pan as well. Add the turmeric, garlic, nutritional yeast, soy sauce, a few drops of tabasco (or if you don't have pepper), kala namak salt and another 1-2 tsp of olive oil. Cook for a few minutes and season to taste if necessary.


In the meantime toast the pittas and slice up the avocados.


Once the pittas are toasted, cut them in half, open them and fill with spinach and the tofu scramble. Reassemble to avocado on the plate, drizzle some lemon juice on it and sprinkle a bit of salt on it as well. Enjoy!
