Dairy-free cashew sour cream

This vegan sour cream is one of my favourite dairy alternative, super versatile for savoury as well as sweet dishes.

Try it as a dip, as sour cream replacement, in dishes like soups, stews or even as a sweet version. If you are missing dairy in your life then cashew nuts are a life saver!





INGREDIENT:


Savoury version:

  • 3/4 cup cashew nuts
  • 1/2 cup water
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Sweet version:

  • 3/4 cup cashew nuts
  • 1/2 cup water
  • 2 tbsp lemon juice
  • 1/2 tsp sugar or a couple of dates

METHOD:

This is so simple! Put all ingredients into a small blender (like a smoothies blender) and blend until you get a smooth paste. Depending on the blender you might have to add a bit more water to get a smooth cream. Also if your blender isn't very powerful I would recommend soaking the cashews overnight (use a bit less water when blending that instance). For the sweet version you could even add some cinnamon or vanilla and serve with a cake.
