Rich red pepper sandwich spread

INGREDIENT:
- 1 red pepper
- 1 medium sized tomato
- 1 tbso olive oil
- 1 tbsp lemon juice
- 2 tsp tomato paste
- 25g of pine nuts
- 1/2 tsp minced garlic
- 1/2 tsp paprika powder
- Smoked paprika powder
- A few drops Tabasco
- Salt to taste
METHOD:
Finely chop up the red pepper and tomato and blend with a table spoon of olive oil, tomato paste, lemon juice, a few drops of tabasco and 25g of pine nuts until smooth - you might have to add a tiny little bit of water for it to blend nicely (use a small smoothie blender for best results). Once you have a smooth paste add all other ingredients and combine. Season to taste and spread on toasted bread. Garnish with some salad leaves.
