Vegan gravy - super easy and perfect for roast dinner
I was experimenting for quite a while until I got it right. I made gravy before some time ago without using measurements or writing down the ingredients and I just couldn't remember anymore what I used back then. I recalled it was very, very tasty so I wanted to give it another go. I tried, tested and used all kinds of different ingredients (I'm just really getting into miso paste at the moment) and voila it worked. I was amazed how delicious it was, it tasted even better than the one I made previously. I though it would taste nice but this vegan gravy is really something else.
If you are less a fan of oil you can leave it out, but it does bring out the flavour more. And make sure you're using Dijon mustard (grainy or not doesn't matter as it will be blended anyway) and not English mustard (it would be a completely different taste).

You can now make your own delicious and easy vegan gravy and pour over your roast vegan dinner.
This gravy is perfect over roast smoked tofu. I used Taifun tofu rosso, so delicious. Here is the link for this tofu if you're interested.
Pour the gravy over roasted or pan-fried potatoes.
It also tastes super delicious on French beans or any kind of cooked vegetables. What doesn't go with vegan gravy? ;-)
INGREDIENTS:
Vegan gravy ingredients:
- 1 cup soy milk
- 5 tsp nutritional yeast
- 1 tbsp olive oil
- 2 tsp apple cider vinegar
- 2 tsp BBQ seasoning
- 1 1/2 tsp Dijon mustard
- 2 tsp miso paste
- 1/2 tsp garlic granules
- 1/2 tsp onion granules
- 2 tsp corn starch
Other ingredients:
- Pepper to taste
METHOD:
This is really super easy! To make your vegan gravy add all gravy ingredients to a blender and blend.
Pour into a pan and, heat up and season to taste with pepper (depending on what BBQ seasoning you are using you might not need any pepper at all). Cook on medium heat for 5 minutes.
Pour over your roast dinner, roast veggies, smoked tofu or whatever you like your gravy on. Enjoy!
