INGREDIENTS:


Tuna ingredients:

  • 1 can of braised tofu (get it from the health food shop or Amazon)
  • 1 onion
  • soy sauce
  • 1 sheet of sushi nori (or any dried sea vegetable/seaweed)

Mayo ingredients:

  • cashew nuts
  • garlic or garlic powder
  • lemon juice
  • pepper
  • salt

METHOD:

Put one dry sheet of sushi nori (or any dried sea vegetable) into a blender and switch on until it is pulverised. Drain the braised tofu from all liquids and cut very thinly. Same with the onion. The easiest and lazy option would be to put both into a food processor. Then combine the sushi nori, tofu and onion and add a bit of soy sauce. Put two handfuls of cashew nuts into a blender, add a bit of water (not too much, you will have to add just enough for it to blend well, not more, otherwise the tofu tuna mayo will be too runny), add garlic powder, lemon juice, salt and a bit of pepper and blend until you get a smooth mayo like texture. Add the mayo to the rest of the ingredients and combine. Season to taste with more soy sauce, garlic and pepper and if you like a more intense fish taste add another 1/2 sushi noori sheet. Serve on your favourite bread and enjoy.
