10 minute recipe: smokey veggie pan

This is another recipe that's super quick to do but very rich in taste. A mix of delicious and healhty veggies combined with a smokey flavour is a great combination, especially when it doesn't take much time to make.

If you don't have the exact ingredients at home then you can be quite playful with this dish - for example instead of tofu you could use cashew nuts, instead of the aubergine you could use mushrooms, etc. As long as you keep the seasoning the same this dish can be quite flexible. Have fun with it!

INGREDIENTS (3-4 portions):

  • 1 aubergine
  • 1 medium size onion
  • 100g extra firm smoked tofu or 150g of firm normal tofu (squeeze the water out first)
  • 1 tsp garlic powder
  • 2 1/2 tsp liquid smoke or 1 - 1 1/2 tsp smoked paprika powder (although it tastes better with liquid smoke)
  • 1 1/2 tsp salt
  • 250g mixed frozen vegetables (I used carrot, peas and beans, but any veggie mix will do)
  • 180g chargrilled artichokes in oil (squeeze some of the oil out first and roughly chop them up)
  • 1 1/2 tbsp tomato puree
  • 1 tsp salt
  • 1/2 - 1 tsp sriracha sauce (or 1/2 tsp of mild chili)
  • 1 tsp garlic powder
  • 1 tbsp lemon juice

METHOD:

Get a large pan and drizzle some oil in it. Then finely chop an onion and cut an aubergine into cubes. Add them to the pan and fry on high heat. Aubergines need a lot of oil unfortunately. So if you are worried about that then add a bit of water to the pan instead of oil so the aubergine gets cooked rather than fried (which does taste nicer though). Keep stirring. After 5 minutes add all other ingredients and keeping stirring so the veggies don't stick to the pan. The whole process shouldn't take more than 10 minutes or so. Perfect for a nourishing weeknight dinner. Enjoy!
