10 minute soba noodles with tomato sauce

  • SHARE
This is the perfect vegan mid-week dish, it literally takes 10 minutes or less even! Great when you want a wholesome, healthy meal and don't want to spend much time in the kitchen. Add your favourite nuts or seeds for extra protein.

The tomato sauce with sun-dried tomatoes compliments this dish so well. It's raw and you don't have to cook it, but it still tastes amazing. It's all about simplicity without the hassle.

METHOD:

Boil water and add the soba noodles and 1 stock cube.

Cook for 5 minutes or according to packaging instructions.

In the meantime chop up 3-4 large tomatoes.

Add them to a blender together with all other tomato sauce ingredients and blend. There is actually no need to cook the tomato sauce, it tastes great as it. This is the amazing thing about this dish, it requires barely any time!

Drain the noodles and either pour the tomato sauce over the warm noodles or warm up the sauce first (I normally just pour over as is).

Sprinkle either sunflower seeds, pine nuts or your choice of nuts or seeds on top. Enjoy!

Vegan Carbonara with tofu bacon bits

I really wanted to try to make vegan Carbonara for a long time but only found recipes with mushrooms in them. Also I wanted to add more protein to this dish. So I added my vegan bacon bits to it. Super easy and done in a breeze.

Oat veggie patties with a savoury pistachio creme - gluten-free and protein rich

Oats are super healthy but they aren't just for breakfast! You can also use them for main dishes! I wanted to try something different and more healthy but still delicious and easy to make. So I came up with the recipe for these oat veggie patties and topped with a delicious savoury pistachio creme. And you might even have all ingredients in your pantry already. This meal is gluten-free, high in protein and a great mid-week meal.
