10 minutes recipe: super quick vegan gluten-free soba noodles with raw tomato sauce
INGREDIENT (3 portions):
Ingredients tomato sauce:
- 3 large ripe tomatoes
- 1/2 tsp galic powder
- 1 tsp good quality extra virgin olive oil
- 3/4 tsp sea salt
- 1/2 tsp oregano
- Soba noodles
- 250g firm tofu
- 1/2 tsp smoked paprika powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Oil for frying
- Some gluten-free flour (or any flour you have at home)
- Optional green side salad
Cook the soba noodles in boiling water with some salt for 5 minutes and then drain.
Then take a block of tofu and squeeze some of the water out so it can absorb flavours better. Cut the tofu block into small cubes and put them into a bowl. In the bowl season the tofu with salt, pepper. 1/2 tsp garlic powder, 1/2 tsp smoked paprika powder and then mix in some flour (this will help to lock in the flavour). Now put the tofu cubes into a pan and fry in some oil until they brown on all sides.
Roughly chop up the tomatoes and add them and all other ingredients into a food processor or smoothie maker. Blend or process until you get a nice smooth tomato sauce.
Serve the soba noodles in a bowl, pour the tomato sauce over it and then add the tofu cubes. Voilà, 10 minutes later and you have a lovely healthy meal! Enjoy with a green salad on the side!
