Easy courgette patties with vegan tzatziki

I am a huge courgette (zucchini) fan and especially in summer they taste even better. So I really wanted to use them in my recipes. It's really super easy and you can get all ingredients in your local supermarket. And they only take about 15-20 minutes to make, couldn't be quicker. These patties would also work well on a grill and in burgers. The are perfect for summer!


When I thought about what recipe to make next I really wanted to used courgettes. They are so delicious and too often used as a side, so I wanted them to be the hero of the dish. I had also bought dill and didn't know what to do when I realised dill and courgettes are a natural combination. They are made for each other and the dill really takes this dish to anther level.


And you don't need any eggs to bind these patties, they hold together really well.


And what works well with courgette or (zucchini)? Tzatziki! I made a recipe before so it was time to make it again. And it's really easy, just throw a few cashews into a blender among some other ingredients and blend. And voila. By the way, there is no need to soak the cashews, if you have a normal blender it will do the job for you. No need to wait for ours, it's all about instand gratification ;-) Check it out and let me know what you think.

Easy courgette patties with vegan tzatziki


These courgette patties were so quick to make and absolutely delicious. I actually surprised myself how nice they were.



Dip them in some home-made vegan tzatziki and you have the perfect summery dish that doesn't take long to make.

Cook them in a bit of oil until they are crisp and brown on each side and serve.

The dill worked so well in these patties. I think dill is a very underused herb. It has a distinct savoury flavour that also works well with potato dishes.

INGREDIENTS (6 patties, 2 portions):


Courgette patties ingredients:

  • 2 medium size courgettes grated
  • 1 handful of dill
  • 2 cups of rolled oats
  • 1 tsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 3/4 - 1tsp salt
  • 1 tsp minced garlic
  • 1 tsp onion powder
  • Black pepper to taste


Vegan tzatziki ingredients:

  • 3/4 cup cashew nuts
  • 1/2 cup water
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • some finely cubed cucumber
  • a few finely cut mint leaves (optional)

METHOD:


Grate 2 medium sized courgettes and finely cut a handful of fresh dill.


Then process 2 cups of rolled oats in a food processor until you get a coarse meal - this should only take 30 seconds or so.


Transfer the oats to a large bowl and then add the grated courgettes and the fresh dill. Add all other courgette patties ingredients as well and season to taste with black pepper.


Mix everything together with your hands until you get a sticky dough. Then form patties. Each should have roughly the size of a burger patty, around 2cm in thickness or a bit thinner.


Cook them in olive oil until they are brown and crispy on either side.


In the meantime prepare the vegan tzatziki. Throw al ingredients into a smoothie blender (apart from the cucumber) and blend. Pour into a bowl. Finely cube some cucumber, add to the bowl and mix together. We never used to add mint to it at home, so my version only has mint as an option. I actually prefer it without. I used ready minced garlic, but fresh garlic will taste even better by the way, it gives it a bit of a kick.


Serve the patties with the vegan tzatziki and enjoy!
