Easy jackfruit and quinoa bake

I love this recipe because it's so easy and quick to make. I now make it when I get home but still have a few things to do. Then I quickly prepare it and put it into the oven, get on with my work or chores I have to do and voila, 50 min later my delicious dinner awaits.
I am not sure if I am the first to do this but I found the quinoa and jackfruit are such a logical combination. Quinoa is healthy and high in protein, but let's be honest, a bit boring. Jackfruit is super delicious if done right (won't name names, but some shops and restaurand make it sweet instead of meaty), but not the highest protein source. But when you combine both you get a mix of flavour and texture that really hits the spot.
For me this is a fantastic autumn meal. It's wholesome, warming and healthy (so you don't have to give up your fitness goals), yet has great flavour and will really fill you up.
INGREDIENTS (4-5 portions):
- 2 cans of jackfruit in water
- 200g uncooked quinoa
- 1/2 finely chopped onion
- 4 tbsp soy sauce (unsweetened)
- 3 tbsp sweet chilli sauce
- 3 tbsp tomato paste
- 2 tbsp olive oil (for taste)
- 2 tsp miso paste
- 3 tsp bbq seasoning (you can also use 2 1/2 tsp smoked paprika if you don't find bbq seasoning)
- 2 tsp minced garlic
- 1l boiling water
METHOD:
Preheat your oven to 200C (390F).
Then drain 2 cans of jackfruit in water.
Chop them up into bite-size pieces and add them to a baking dish.
Wash 200g of quinoa. Make sure you wash it well as it's much easier to digest. Add the quinoa to the baking dish as well together with the rest of the ingredients including boiling water (it's important that the water is boiling because otherwise it will take longer for the jackfruit quinoa bake to cook thoroughly).
Stir well with a wooden spoon and then bake in the oven for 50 min - or until the water has evaporated and just before the edges start to get burnt.
Serve with a refreshing green salad on the side. Enjoy!
