Easy vegan spinach 'pie' or Spanakopita

This is my take on the original Greek Spanakopita, but vegan, with quick almond feta cheese. I really simplified the recipe so it's very quick to do and all the hassle of vegan cheese making was taking out. Try it for yourself and let me know what you think!

INGREDIENT:


Almond cheese ingredients:

  • 80g almond flour (aka ground almonds)
  • 1tbsp extra virgin olive oil
  • 150ml water
  • 1large tbsp nutritional yeast
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • Juice of half a lemon
  • 5 tbsp fine bread crumbs
  • Dash of pepper

Other ingredients:

  • Puff pastry roll
  • 300g spinach
  • 8 spring onions
  • 25g dill

METHOD:

To make the almond cheese process almond flour, lemon juice, olive oil and water in a small blender until you get a smooth texture. Then pour the mixture into a bowl and add the rest of the ingredients until you get a paste like mixture.


Preheat the oven to 180C. Then finely chop the spring onions and sauté the spinach in a pan in a bit of olive oil with some salt, pepper and garlic. Make sure most of the water from the spinach evaporates. In the meantime chop up the dill. Once the spinach is done take it off the hob and combine it with the almond cheese and dill.


Now unroll the puff pastry sheet (I always buy the one that already comes on a baking sheet) and evenly spread the mix to the middle of the sheet (basically the same way you would make a wrap). Then fold the bottom part of the sheet over the mixture and then the top part and slightly press it down so it doesn't open up when it's baking (see picture above). Then fold in both ends. Bake for 30 - 35 minutes or until the pastry gets a golden colour. Enjoy.
