Quick filling Italian summer pasta salad with tomato tofu

A great and filling salad for hot days. Refreshing, tasty and healthy and all done in 10 minutes!

This is also nice to bring for a picnic.

INGREDIENTS (3 portions):

  • 200g pasta
  • 200g tofu
  • 1/2 onion
  • A large handful of mixed olives
  • 3 1/2 tbsp tomato paste
  • 1/2 tsp garlic powder
  • 1 tbsp lemon juice
  • Salt
  • Black pepper
  • 1 tsp Lemon juice
  • Tomatoes
  • Basil
  • Salad leaves
  • Extra virgin olive oil
  • Apple cider vinegar

METHOD:

Cook the pasta in boiling water with some olive oil and a dash of salt (if you are impatient, then get the quick cook one, which only takes 3 minutes).


While the pasta is cooking chop 1/2 an onion and finely slice a large handful of olives. Fry the onion with some olive oil and with your hands/fingers crumble 200g of tofu and add to the pan. Then add the sliced olives, tomato paste, garlic powder, lemon juice and finally salt and pepper to taste.


When the pasta is done drain the water and mix together with the tofu mix you just made.


Then transfer everything into a large pan, add fresh sliced tomatoes, basil, green salad, vinegar, olive oil and again some salt to taste and you are done. Enjoy at home or when having a picnic.
