Jalapeno pizza with cashew cheese and gluten-free gram flour base

For those of you who like to create everything from scratch, have a high-protein AND gluten-free base you can now have it all!

Gram flour is one of my favourite ingredients. First it's very high in protein, healthy and I find I digest it much better than chickpeas on their own.

And a pizza base made with this gluten-free flour gives your pizza another element of yumminess. The flavour is a bit similar to an egg omelette but has more of a starchy taste, similar to potatoes. Try it for yourself, it's a deliciously healthy treat.

INGREDIENTS (2 pizzas):


Ingredients gluten-free pizza base:

  • 1 cup gram flour (chickpea flour)
  • 3/4 cup plant based milk (unsweetened) or water
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Ingredients cashew cheese:

  • 80g cashews
  • 1/4 cup water
  • 2 tsp lemon juice
  • 1/3 tsp salt
  • 1 tsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1 tbsp nutritional yeast

Ingredients pizza toppings:

  • Jalapeno peppers
  • Sun-dried tomatoes
  • Mushrooms
  • 1 onion
  • Tomato paste
  • Oregano

METHOD:

Preheat your oven to 180C (360F).


Whisk all pizza base ingredients together and make sure there are no lumps - If you are lazy just mix them into a blender, I find it's the quickest way. Then add some oil to a pan (use a kitchen towel to distribute evenly), pour the base into it and cook for about 5-10 minutes on both sides (flip like a pancake). The ingredients should be enough for 2 pizza bases.


Clean the blender if you used it and continue making the cashew cheese. Put all ingredients into a powerful smoothie blender (if yours isn't very powerful you might have to soak the cashews for a few hours beforehand). Blend until you get a smooth paste.


Spread some tomato paste on the gram flour pizza bases, add cashew cheese, sun-dried tomatoes, sliced mushrooms and sliced onions and oregano on top. I always drizzle a bit more salt on top as well. Line a baking tray with parchment paper and bake in the oven for 10 minutes.


Take out and enjoy!
