Oat burgers with parsley potatoes and tahini sauce

These vegan burgers with parsley potatoes are so tasty and easy to make and the tahini sauce complements it so well! They are also high in protein and iron. A great vegan dish for the whole family.


This is a total fusion dish. I was experimenting and combined flavours and ingredients you wouldn't normally see next to each other but it worked so well. So there is a bit of middle easter cuisine as well as Austrian cuisine in this savoury dish.


I used oats because they just so versatile, easy to work with and take on even savoury flavours easily. I added extra protein and iron by mixing in tofu and tahini. I am totally into tahini at the moment and have it in almost every meal, don't ask why. But I feel it gives everything and amazing taste. You can't really taste it in the oat burgers, it's more of an umami taste and it gives it more depth and flavour. If you haven't used tahini before, then make sure you don't forget to add lemon juice (as per my recipe). Tahini itself (vital ingredient for hummus) is made from ground sesame seeds (very healthy and iron-rich) but can taste a bit bitter. So the lemon juice takes away the bitterness and completely transforms it.


Parsley potatoes are a typical Austrian side dish. Normally you would make them with butter but olive oil more than does the trick. Mix in freshly chopped parsley and you never want to taste normal potatoes. It's a super simple way to pimp your spuds.

Cook the oat burgers in some oil until they get nice and crispy.

Cook salad potatoes until they are golden brown and then add freshly chopped parsley at the end.

If you love a lot of sauce then double the amount of tahini sauce you're making. Even if you don't finish it all you can always use it for something else, like as a salad dressing.

INGREDIENTS:


Vegan oat burgers ingredients (2-3 portions):

  • 150g oats
  • 75g firm tofu
  • 4 tbsp dark soy sauce
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp tomato puree
  • 1 tsp garlic paste
  • 1 tsp smoked paprika powder
  • Black pepper to taste


Parsley potatoes ingredients:

  • Cooked salad potatoes
  • Generous amount of sea salt to taste
  • Olive oil
  • Good amount of freshley chopped parsley

Tahini sauce ingredients:

  • 2 1/2 tbsp tahini
  • 6 tbsp warm water
  • 2 tbsp lemon juice
  • Generous amount of salt (to taste)

METHOD:


Cook salad potatoes (enough for 2-3 portions).


To make the vegan oat burgers add all burger ingredients to a bowl and then mash it all together, first with a fork and then with your hands (maybe cut the tofu into cubes first, will make it easier to mash).


Create burger shapes.


Then add a good amount of oil to a pan (the more oil the crispier they will be and the better they will taste). Cook until they are crispy on both sides.


Put aside and then add some oil to another pan, add the salad potatoes, a generous amount of salt (potatoes need to be well seasoned) and then cook for a while until they are golden brown.


In the meantime chop of some fresh parsley.


When the potatoes are golden brown mix in the chopped parsley and take off the heat.


To make the tahini sauce add all sauce ingredients to a small bowl and mix together until smooth.


Serve the vegan oat burgers with the parsley potatoes and drizzle the tahini sauce over the burgers. Enjoy!
