Quick tortilla wraps two ways

Two recipes for very quick, easy and delicious tortilla wraps! Veggie avocado with pumpkin seed creme and spicy braised tofu wrap.

And that's exactly how I developed these recipes. I was so busy with work that I needed to come up with a healthy lunch that wasn't hummus on bread (couldn't live without it but there is a limit to how many times a day I can have it). I didn't add exact ingredients (apart from the pumpkin seed creme) as it depends on how many wraps you want to eat and the cooking process is very easy anyway.


Also, I eventually wanted to use braised tofu (I buy mine in the health food shop or online from Amazon) in one of my recipes again. It's kinda my emergency tofu when I forgot to buy one from the supermarket. It comes tinned and doesn't need to be chilled so you can even take it on holidays with you! I love the taste of it and it works well with tofu scramble for example or in a vegan tuna mayo (you should deffo give that a try, my friends were raving about it when I made it last).





INGREDIENTS:


Avocado veggie wrap with pumpkin seed creme:

  • Avocado
  • Grated carrot
  • Lemon juice
  • Salt
  • Salad (I love lambs lettuce)
  • 75g pumpkin seeds
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder/granules
  • 3/4 tsp salt
  • 250ml plant based milk (soy milk for example)


Spicy braised tofu sweetcorn and mushroom wrap:

  • Braised tofu
  • Finely chopped onion
  • Smoked paprika powder
  • Chili powder
  • Garlic powder
  • Soy sauce to taste
  • Tomato paste
  • Salad

METHOD:

Avocado veggie wrap with pumpkin seed creme:

Start making the pumpkin see creme first by adding 75g pumpkin seeds, 1 tsp lemon juice, 1/2 tsp garlic powder/granules, 3/4 tsp salt and 250ml plant based milk (soy milk for example) into a high power smoothie blender and blend for roughly 1.5 minutes or until you have a smooth creme. Then grate a carrot and cut an avocado into either cubes or slices. Warm up the tortilla as per packet instructions (you don't have to, I was too hungry and impatient to do so), add the avocado, drizzle some lemon juice on it and sprinkle some salt on top, add some grated carrot and salad and then pour the pumpkin seed creme on top. Wrap and enjoy!


Spicy braised tofu sweetcorn and mushroom wrap:

Open the tinned braised tofu and drain the liquid. break it up and sauté in a pan with all other ingredients (apart from the salad). Season to taste. Warm up the tortilla as per packet instructions (you don't have to, I was too hungry and impatient to do so). Add to the spicy braised tofu mix to the wrap, add salad on top, wrap up and enjoy!
