The quickest vegan lasagna ever

  • SHARE
The idea to this super quick and easy lasagne came to me when I felt very lazy on the weekend and I wanted that's really quick and easy to make (in less than 10 min!). And should also be fairly healthy and of course delicious. So basically I used hummus instead of the white sauce and it tasted really amazing!

Normally I make lasagna using cashew cheese but I thought why bother, there must be an even easier way. And hummus is indeed a great replacement for the white sauce.I know what you are thinking but it actually works surprisingly well! And after a very short preparation time it goes into the oven and out comes a delicious wholesome and healthy dish. The recipe is for two portions but I actually polished it off all by myself!

The quickest vegan lasagna ever

I had to make a quick video for you to show it to you in action. It was really very nice!

Preheat the oven to 180C (360F).

Add all tomato sauce ingredients into a bowl and mix together. The reason why I added a 3/4 tsp of sugar is to make the tomato sauce less acidic. As this is a super quick recipe this is a shortcut to better taste, but you can also have it without, it will just be a bit more acidic.

Nothing to action for the white sauce if you bought your hummus from the store. Unless you want to make it yourself, I have a really nice butterbean hummus recipe here.

The next bit is a bit wordy but it’s really just lasagna sheets, sauce, veggies and the same step repeated. So here it goes:

Start adding some tomato sauce to a shallow oven-proof dish, just enough that it fully covers the bottom, then add a layer of lasagna sheets (or just one, depending on how big your dish is). On top of this layer add another layer of tomato sauce and then a layer of courgette. Add another sheet(s), followed by a layer of tomato sauce. Then a layer of mushrooms (make sure they are sliced finely, otherwise this layer becomes too thick). Next layer of lasagne sheet (s) on top. Now add the hummus on this layer and thinly sliced tomatoes. On top of that goes another layer of lasagne sheet(s), then the rest of the tomato sauce and a final layer of courgettes and tomatoes. When that's done sprinkle some oregano, sea salt, black pepper and a dash of olive oil on top.

And off it goes into the oven for 35 - 40 minutes.

Enjoy!

Oat veggie patties with a savoury pistachio creme - gluten-free and protein rich

Oats are super healthy but they aren't just for breakfast! You can also use them for main dishes! I wanted to try something different and more healthy but still delicious and easy to make. So I came up with the recipe for these oat veggie patties and topped with a delicious savoury pistachio creme. And you might even have all ingredients in your pantry already. This meal is gluten-free, high in protein and a great mid-week meal.

Vegan Mexican lasagna

It's actually logical that Italian lasagna and Mexican chilli sin carne would go together! Both use tomato sauce and either white sauce or sour cream, so why not combine the two. And the resulting fusion was amazing! I don't know why I haven't tried that before!
