Sesame tofu skewers with spicy peanut butter dip and tropical salad

It feels like the summer is here already and it's time for vegan BBQ! So I came up with this super easy sesame tofu skewers. You can throw them on the grill or griddle pan and then enjoy with a spicy peanut butter dip. All super easy. And I also added a tropical pineapple avocado salad recipe that compliments the skewers really well.


My friend was having a BBQ last week and I experienced first hand how stressful it can be to prepare all the dishes. So I deliberately kept this recipe really simple and easy so you have more time to enjoy with friends and spend less time in the kitchen. The sesame works really well with the tofu and the spicy peanut dip gives it the little delicious extra. Such nice summery flavours. When I get invited to a BBQ my friends always ask me what they should make for me, this will be my reference page to send to them now! ;-)

This dish is great to share and having the sesame tofu on skewers really helps with grilling .


Pineapple avocado salad


This tropical salad is also super simple and a perfect companion to the sesame tofu skewers. All you need is pineapple, avocado, rocket, red onion, pistachios, lime, olive oil and salt and you are done. Very summery and refreshing.

INGREDIENTS
SESAME TOFU SKEWERS (2-3 portions):


Tofu skewers ingredients:

  • 400g firm tofu
  • Skewers
  • Sesame seeds

Marinade ingredients:

  • 2 tsp sesame oil
  • 5 tbsp soy sauce (unsweetened)
  • Juice of 1 orange
  • 2 tsp garlic powder
  • 3 tbsp flour (or any gf flour)
  • Spicy peanut dip ingredients:

  • 1/2 cup smooth peanut butter
  • 1/2 cup water
  • Juice of 1 lime
  • 1-2 tbsp soy sauce (unsweetened)
  • 1/2 tsp garlic powder
  • Chilli powder


INGREDIENTS TROPICAL

PINEAPPLE AVOCADO SALAD:


Salad ingredients:

  • Handful of rocket leaves
  • 200g pineapples
  • 1 avocado
  • 1/2 red onion
  • handful of finely hacked pistachios
  • Juice of 1/2 lime
  • Salt (or to taste)
  • Olive oil
  • Chilli flakes (optional)

METHOD:


Start with squeezing the water out of your tofu. Instructions can be found here.


Cut tofu into strips and put into tupperware container.


Then mix together all marinade ingredients (make sure there are no lumps).

Pour the marinade over the tofu in the tupperware container. Close the lid and shake (carefully so you don't break the tofu strips). Let marinate for at the very least 30 min. The longer the more flavour the tofu will absorb.


Cover a large plate with sesame seeds. Roll the tofu skewers in the sesame seeds so that the tofu is coated on all sides.


Grill on a BBQ or griddle pan.


To make the spicy peanut butter dip mix all peanut butter dip ingredients in a bowl until you get a smooth texture. If you don't have smooth peanut butter at home you can also throw all ingredients into a blender, makes it even easier.


To make the tropical salad get a large bowl and add a handful of rocket leaves. Chop up some pineapple (I used tinned one) into cubes and do the same with an avocado. Add to the bowl together with the rest of the ingredients. Btw if you are too lazy to hack pistachios then just throw them into a blender or food processor.

Season to taste with salt (it will need a bit more than usual because of the sweetness of the pineapple) and add optional chilli flakes.
