Smoked tofu ratatouille on polenta

Normally you also have to add an eggplant but I didn't. I do love the taste of them but I find they need soooo much oil and they take longer to cook. So this is my easier version of a ratatouille.
Smoked tofu is one of my staple ingredients at home. Once you fry it in a bit of oil it gets a bit crispy and it's a versatile and healthy protein source.
Food for me always needs to speak to all senses. And I just love the golden colour of polenta! It just makes my mouth water.
INGREDIENTS (3-4 portions):
Step 1 ratatouille ingredients:
- 1 block of smoked tofu
- 1 finely chopped onion
Step 2 ratatouille ingredients:
- 1 cubed red pepper
- 1 cubed green pepper
- 1 cubed yellow pepper
- 2 cubed courgettes
- 3 tbsp tomato paste
- 1 veggie stock cube
- 2 tsp minced garlic
- 1 1/2 tsp oregano
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1/2 l water
Step 3 Polenta ingredients:
- 150g quick cook polenta
- 1 veggie stock cube
- 1 tsp minced garlic
- 600ml boiling water
METHOD:
Step 1:
Cut a block of smoked tofu into small cubes and finely chop 1 onion.
Sauté in some oil on high heat until the onion has softened.
Step 2:
Then finely dice one red, green and yellow pepper, cube 2 courgettes and throw all of them into the pan as well. Then add all other ingredients from step 2 and cook for 15 - 20 minutes.
Step 3:
While the smoked tofu ratatouille is cooking cook the polenta. I always get quick cook polenta (Sainsburys only sell the quick cook one I think). Add 150g of the polenta to a pan, then add 1 veggie stock cube, 1 tsp minced garlic and 600ml of boiling water. Cook for 3-5 minutes (I always cook for 5 minutes). If needed add some water (polenta thickens up quickly, especially when it cools down).
Plate the polenta first and then add the smoked tofu ratatouille on top.
