Smokey bbq jackfruit with rice - vegan

Jackfruit is all the rage but I feel often people don’t know how to cook it right to really give it that meaty taste. With jackfruit it's all about giving it this smokey bbq taste that's similar to pulled pork in taste and texture but of course plant-based. So I experimented and came up with my ultimate bbq jackfruit recipe that really hits the spot! It's rich in meaty flavour, with a bit of spice and rich and delicious! And the best is you will get all ingredients in larger supermarkets!

 

And you don't need to have any skills to make this recipe! It's that easy to prepare! Trust me, you will love it!

 

Let me know what you think of my recipe! It's so easy to make and absolutely delicious! I served it to a friend of mine who doesn't like vegan food and he even went for seconds! The jackfruit kinda mimics the consistency of slow cooked meat and by adding certain ingredients you can get it to taste surprisingly meaty.

Jackfruit doesn't have a lot of protein itself. So that's why I added pine nuts - you can also add crushed dry roasted peanuts for your protein fix. Both work very well.

INGREDIENTS (3 portions):

 

Step 1: smokey bbq jackfruit ingredients:

  • 2 cans of jackfruit in water
  • 3 - 4 tbsp oil
  • 2 tbsp soy sauce (unsweetened - to taste)
  • 3 tbsp sweet chilli sauce
  • 2 tbsp tomato paste
  • 3 tsp smoked paprika powder
  • 1 tsp miso paste
  • 1 - 2 tsp minced garlic
  • 1 tsp onion powder
  • just under 0.5l of water

 

Step 2: other ingredients:

  • Cooked white or brown rice
  • 1 avocado (optional)
  • Pine nuts

METHOD:

 

Step 1:

Drain two cans of jackfruit. Roughly cut the jackfruit into smaller junks. Then fry them in a pan in 3-4 tbsp of oil for around 5 minutes on high heat. Then add all other smokedy bbq ingredients from step 2 and cook for another 20 minutes or until the jackfruit has softened. You should end up with an amazing tasting jackfruit in a delicious bbq sauce.

 

Step 2:

Serve with some rice and garnish with avocado. Add pine nuts for extra protein (or crushed salted peanuts would do nicely too). Enjoy!
