Tahini mushroom pasta

This must be one of my easiest vegan mains every. Tahini is such a superfood, super delicious and high in protein and it works really well even in pasta dishes. Especially if you combine it with the earthy flavour or mushrooms! But don't worry, if you don't like mushrooms you can just replace them with another ingredient like peas and you still get an amazingly delicious pasta dish.

If you like easy and wholesome vegan dishes then I can only recommend this one. So quick and easy and it can all be prepared in one pan (apart from the paste). So there is less washing up to do.

This recipe is also fool-proof. You can make it with any pasta and any mushrooms. Just pop down your local supermarket and pick up the ingredients and you are ready to roll.

INGREDIENTS (2 portions):

 

Step 1:

  • Some olive oil
  • 250g mushrooms
  • 1/2 tbsp minced garlic
  • 1/2 tsp sage

Step 2 - tahini sauce:

  • 150ml water
  • 25ml lemon juice
  • 100g good quality tahini
  • 1 tsp salt (to taste)
  • Black pepper to taste

  • Cooked Pasta

METHOD:

 

Start with cooking some pasta of your choice (enough for 2 people).

 

Step 1:

The heat up some oil in a pan and sauté 250g of sliced mushrooms (any variety really), 1/2 tsp of minced garlic and 1/2 tsp sage (you can also add some onion if you like, but I just wanted to keep it as simple as possible). Let everything reduce.

 

Step 2:

Then add all ingredients from step 2 to the pan as well and mix until you get a smooth sauce. You may need to add a bit more water sometimes

 

Step 3:

Pour the tahini mushroom sauce over the cooked pasta. Add some chopped parsley on top for a bit of greenery. Enjoy! ;-)
