Vegan cashew cheese pizza with green peppers, mushrooms, artichokes and olives

Vegan pizza with is one of my favourites on a lazy weekend. It's really easy to make, takes only 10 minutes to prepare and the rest is done by your oven. A real treat and the home-made dairy-free cashew cheese is a much healthier and delicious alternative to most of the shop-bought vegan cheese that are out there. I also made a video on how to make it.


I often get vegan pizzas in restaurants that have no cheese on them. Although more and more places now offer vegan cheese like Zizzi or this stylish Italian restaurant O'ver on Southwark Street. But for me it's important that food doesn't just taste amazing but is also healthy (mostly at least, cakes and chocolate are an exception in my book hehe). So I always make my pizzas with cashew cheese. Cashews are rich in vitamin E and a good source of minerals, particularly magnesium and zinc. And when blended with a few simple ingredients it tastes surprisingly like cheese!

INGREDIENTS (1 large pizza):

  • Pizza base (not frozen; if you use a frozen one check out the instructions on the packaging for the baking time)


Cashew cheese ingredients:

  • 60g cashews
  • 1/2 cup water (120ml)
  • 2 tbsp nutritional yeast
  • 2 tsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt


Pizza toppings ingredients:

  • Tomato paste
  • Garlic powder
  • Oregano
  • 1-2 sliced tomato
  • 1 portobello mushroom (or any kind)
  • A few sliced chargrilled artichokes in oil
  • 1/2 sliced green pepper
  • 1 sliced red onion
  • A few sliced black olives
  • Salt
  • Extra virgin olive oil

METHOD:


Preheat the oven to 200C (390F).


Put all cashew cheese ingredients into a smmoothie blender for roughly a minute (or until smooth) until you get a nice thick and creamy cheese sauce. Carefully add a tad more water if needed.


Get the vegan pizza base ready. I bought a ready-made one and not frozen. If you buy a frozen one check out the packaging instructions on how long to bake it.

Spread tomato paste on it and then sprinkle some oregano and garlic powder on it.

Now top it with cashew cheese and sprinkle some oregano and garlic powder on it (alternatively you can also use finely chopped garlic). Then add the tomatoes, mushrooms, artichokes, green pepper, red onion, black olives. Finally drizzle some olive oil on top, sprinkle oregano add a dash of salt on it as well.


Bake in the oven for 10 minutes.

Serve with a nice green salad on the side and enjoy your healthy vegan cashew cheese pizza!
