Vegan cheese pizza bagette
The ingredient that makes this vegan cheese are cashews. If you mix them together with a few other ingredients it becomes this delicious alternative that tastes even better when baked and looks like the real thing.

I used baguettes, but you can also use other types of bread. Even wholemeal bread works well.
Garnish with some rocked or basil leaves and you are ready to go!
INGREDIENTS (2 large portions):
Step 1 - vegan cheese:
- 100ml water
- 110g cashews
- 3 tbsp nutritional yeast
- 2 tsp lemon juice
- 1 tbsp olive oil
- 3/4 tsp salt
Step 2:
- 2 small or medium baguettes
Step 3 - tomato sauce:
- 2 tbsp tomato paste
- 1 tsp minced garlic
- 1/2 tsp oregano
- Spritz of olive oil
- Dash of salt
Step 4:
- Sliced cherry tomatoes
- Sliced mushrooms
- A few onion rings
- Some oregano
- Dash of salt
- Drizzle of olive oil (optional)
Optional:
- Some rocket or basil to garnish
METHOD:
Step 1 - vegan cheese:
To make the vegan cheese add all ingredients from this step into a food blender and blend until you get a nice smooth cream - there is no need to soak the cashews before.
Step 2:
Cut 2 small baguettes in half
Step 3 - tomato sauce:
Add all ingredients from this step into a bowl and mix together with a spoon.
Step 4:
Spread the tomato sauce on the pizza baguettes.
Then pour over the vegan cheese from step 1 (fyi in my video the sauce looked a bit more runny admittedly - I have now adjusted the ingredients to give it a better consistency and make it a bit thicker). Then add sliced cherry tomatoes, mushrooms, a few onion rings, oregano and a dash of salt on top. If you like you can also drizzle the veggies with some olive oil (this prevents them from drying out when you put them into the oven).
Bake in the preheated oven for 10-15min at 150C (360F).
Take out and garnish with some rocket. Enjoy!
