Vegan cheese pizza bagette

Made with cashew cheese this vegan pizza baguette is one of my favourite recipes! It's really easy to make and tastes like the real thing while still using whole food plan-based ingredients instead of shop bought cheese alternatives which are often unhealthy. I have actually shared photos and videos of it on my social media many times, but I have never put together the recipe for you or filmed a recipe video - until now! This vegan cheese melt is perfect for the weekend when you feel like having a treat while watching a nice movie. That's why this recipe has been on quite heavy rotation for me, it's just too delicious and the recreational options on weekends are seriously limited at the moment.

 

The ingredient that makes this vegan cheese are cashews. If you mix them together with a few other ingredients it becomes this delicious alternative that tastes even better when baked and looks like the real thing.

I used baguettes, but you can also use other types of bread. Even wholemeal bread works well.

INGREDIENTS (2 large portions):

 

Step 1 - vegan cheese:

  • 100ml water
  • 110g cashews
  •  3 tbsp nutritional yeast
  •  2 tsp lemon juice
  • 1 tbsp olive oil
  • 3/4 tsp salt

Step 2:

  • 2 small or medium baguettes        

Step 3 - tomato sauce:

  • 2 tbsp tomato paste
  • 1 tsp minced garlic
  • 1/2 tsp oregano
  • Spritz of olive oil
  • Dash of salt

Step 4:

  • Sliced cherry tomatoes
  • Sliced mushrooms
  • A few onion rings
  • Some oregano
  • Dash of salt
  • Drizzle of olive oil (optional)

Optional:

  • Some rocket or basil to garnish

METHOD:

 

Step 1 - vegan cheese:

To make the vegan cheese add all ingredients from this step into a food blender and blend until you get a nice smooth cream - there is no need to soak the cashews before. 

 

Step 2:

Cut 2 small baguettes in half

 

Step 3 - tomato sauce:

Add all ingredients from this step into a bowl and mix together with a spoon.

 

Step 4:

Spread the tomato sauce on the pizza baguettes.

Then pour over the vegan cheese from step 1 (fyi in my video the sauce looked a bit more runny admittedly - I have now adjusted the ingredients to give it a better consistency and make it a bit thicker). Then add sliced cherry tomatoes, mushrooms, a few onion rings, oregano and a dash of salt on top. If you like you can also drizzle the veggies with some olive oil (this prevents them from drying out when you put them into the oven).

 

Bake in the preheated oven for 10-15min at 150C (360F).

 

Take out and garnish with some rocket. Enjoy!
