Vegan cottage pie with sunflower seed mince

This is comfort food at its best: vegan cottage pie with a super easy sunflower seed mince! High in protein, absolutely delicious and anyone could make it! I got all ingredients from my local supermarket as well and all ingredients are natural, soy-free and gluten-free (check your soy sauce just in case). What more could you want on a cold day like today?

 

Cottage pie is something we don't have in Austria but since moving to London I have come to absolutely love it! The crispy mashed potatoes on top (and who doesn't love mash!) with the rich mince filling is an absolutely classic. So I wanted to create a vegan version that's made from scratch, is super easy, delicious and even cheap to make. Sunflower seeds don't cost a lot, but are rich in protein so they are the perfect mince replacement when processed into a coarse meal. You still get a bit of the crunchyness of the seeds but I quite like that. It's works well with the smoothness of the mash.

Vegan cottage pie is the perfect dish for the colder months. And the best thing is this version is much less calorific than the non-vegan one.

When I made the sunflower seed mince the first time I couldn't believe how much it looked like real mince. And the taste was incredible!

INGREDIENTS (5 portions):

 

Vegan potato mash ingredients:

  • 1kg potatoes
  • 3/4 cups plant-based milk
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 3-4 tbsp olive oil
  • 3/4 - 1 cup of soy milk

Vegan sunflower seed mince:

  • 1 large onion
  • 3 large carrots diced
  • 200ml water
  • 200ml red wine
  • 200g sunflower seeds
  • 5 tbsp tomato puree
  • 5 tbsp soy sauce
  • 1 1/2 tsp garlic puree
  • 1 1/2 tsp mixed herbs
  • 1 1/2 tsp smoked paprika

METHOD:

 

Start with peeling just over 1kg of potatoes (the ones that are best for mash) and then cook until soft.

 

In the meantime prepare the sunflower seed mince: finely chop up 1 large onion and peel and dice 2 large carrots.

 

Sauté them in a large pan in a generous amount of olive oil until they have softened a bit. While these are cooking process 200g of sunflower seeds until you get a coarse meal.

 

Add all other vegan sunflower mince ingredients to the pan as well including the processed sunflower seeds. Cook and let reduce for a while.

 

The transfer the mince into a baking dish.

 

Transfer the cooked potatoes into a large bowl and add all potato mash ingredients. Mash together until smooth.

 

Top the mince with the potato mash and rough upt he top with a fork. This way you get these nice dark brown crispy bits!

 

Bake in the preheated oven at 180C (360F) for 20-25 minutes.
