Austrian no mayo potato salad

INGREDIENT (6 portions):
- 1 kg small salad potatoes (like Jersey new potatoes)
- 1 medium onion
- Same amount of pickled gherkins
- 3 tsp Dijon mustard
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 1/2 tsp salt
- 1/2 tsp garlic powder
- Some black pepper
METHOD:
Slice up the potatoes (roughly 0.5 - 1cm thick slices) and boil. In the meantime finely chop up the onion and the gherkins. Make sure you don't overcook the potatoes as they will otherwise fall apart. Once they are done drain the water and put them into a large salad bowl and add the onion and gherkins. Using a cup mix all other ingredients together and stir well. Pour the dressing over the salad and give it a good stir. For the flavours to really develop let it sit for a while before serving.
