Baked paprika sweetcorn sandwich with smoked almond cheese

This is a really nice treat and the flavour go together so well. Easy to make, this sandwich is perfect for when you are looking for a comforting meal without too much hassle.

INGREDIENTS (5 sandwiches):


Ingredients almond cheese:

  • 1/2 cup water
  • 1 cup ground almonds
  • 1 tsp salt
  • 1 1/2 tbsp nutritional yeast (optional)
  • 1/2 tsp smoked paprika powder
  • Dash of pepper
  • 2 tsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder

Ingredients topping:

  • 1 red pepper
  • 1/2 red onion
  • 100g sweet corn

Other ingredients:

  • Bread of your choice

METHOD:

Preheat the oven to 180 C.


Blend all almond cheese ingredients in a smoothie blender.


Finely chop up one red pepper and mix together with 100g of sweetcorn. Cut the onion into rings.

Put the bread on a baking tray lined with aluminium foil or baking paper and spoon the almond cheese onto it. Then add the red pepper onion topping and place a few onion rings on top. Add a dash of salt and pepper on each one and bake in the oven for 10 - 15 minutes.


If you want to be a bit naughty (I know I am) have then with some ketchup. It goes well with a nice green salad.
