Cold courgette, orange & basil soup - healthy and super quick

This recipe is perfect for a healthy summer's, super quick, healthy, low in calories and low carb, but surprisingly filling. Also great for when you want to be good after a long weekend or get into shape before your holidays. And the best thing is it only takes about 5 minutes to make in a blender!

Admittedly I am not even a fan of a cold soup. But when I tried this one I was sold. The mixture of fresh flavours like raw courgettes (yes you can eat them raw, I even make salads with them), the acidity and sweetness of the orange juice, the fragrance of the basil and the subtle kick from the tabasco makes this such a refreshing and healthy soup. The pine nuts give add protein and help to fill you up.

I always love the fresh taste but also the vibrant colours of this soup.

This soup is so quick and easy to make. Just throw all ingredients into a blender. The whole process shouldn't take much longer than 5 min.

Round it up with a drizzle of soy or coconut yoghurt or my cashew sour cream (recipe here). Check out my other delicious dips and sauces here.

INGREDIENTS (2 portions):

Soup ingredients:

  1. 2 sliced courgettes
  2. 150ml of cold water
  3. Juice of 1 orange
  4. Handful of fresh basil leaves
  5. 1 stock cube
  6. Handful of pine nuts
  7. Juice of 1/2 lime
  8. 1/2 tsp of minced garlic
  9. Dash of extra virgin olive oil
  10. A spritz of Tabasco

Optional ingredients:

  1. Plant-based yoghurt (e.g. Alpro soy or coconut yoghurt)

Ready? Put all soup ingredients into a blender and blend. Done! Sprinkle some chives on it and drizzle some plant-based yoghurt on it. Yes, that's it! More time for yourself.
