Olive walnut mushroom pâté

A delicious pâté, perfect as canapés for dinner parties




INGREDIENT:

  • 130g black pitted olives in olive oil (if you can't get them then get the ones in brine and add some extra olive oil)
  • 100g Walnuts
  • 130g brown mushrooms
  • 1 tbsp olive oil
  • Juice of half a lemon
  • Mixed herbs
  • Garlic or garlic powder
  • Mixed herbs
  • Pepper
  • Salt

METHOD:

Cut mushrooms into small slices and fry in a bit of olive oil with a generous amount of garlic and mixed herbs until the mushrooms are soft and you get a nice fragrance. Then add the mushrooms together with all other ingredients into a food blender and blend until you get a nice and smooth consistency. You might have to add a bit of water, olive oil and seasoning (e.g. lemon juice really brings out the flavour) to perfect the consistency and taste. Spread on toasted bread or cracker and serve.
