Vegan boiled egg on avocado toast - packed with protein
And like the real thing it's also very high in protein since it's made of tofu and soy milk!
When I made my egg last time I had to buy egg shaped mould but I thought there must be a more environmental-friendly way. I looked at different ways and realised that avocados are actually egg shaped. So I came up with the idea to use the avocados as egg mould. This way nothing was wasted! I would recommend to get small avocados, otherwise you end up with huge vegan eggs and it will taste and look better if they are more delicate.
I also improved the recipe a bit and made it easier and slightly healthier (e.g. I removed the margarine and used olive oil instead). To get the egg taste I was using kala namak salt (also called black salt, it's often used in Indian cooking). When you make the eggs it might give off a slight sulphuric smell, but don't worry, once you cook it, it will taste great.
I have to say the egg yolk is my favourite in this recipe! It has such a rich taste, it was just amazing. Try it for yourself!

This was just really delicious! And it looked amazing. I added a bit of dill for decoration and flavour. A perfect party dish.

Simply spoon the vegan egg white into the avocado skins and let set in the fridge for half an hour.

Then carve out a hole with a spoon. My friend Ellen kindly played hand model while I took the photos.

Then spoon in the vegan egg yolk. Done! So easy, so delicious!

INGREDIENTS (8 eggs):
Egg shell ingredients:
- 4 very ripe small to medium size avocados
Vegan egg white ingredients:
- 300g silken tofu
- 300ml soy milk
- 4 tbsp nutritional yeast
- 2 tbsp extra virgin olive oil
- 2 heaped tsp white agar agar powder
- 1 tsp black salt (also called kala namak salt)
Vegan egg yolk ingredients:
- 50g silken tofu
- 1 1/2 tsp fine polenta (use the one that only takes up to 5 minutes to cook)
- 1/2 cup water
- 2 tbsp olive oil
- 1 1/2 tbsp nutritional yeast
- 3/4 tsp turmeric
- 1/2 tsp kala namak salt
- 1/4 tsp garlic powder
Avodado toast ingredients:
- Bread
- Garlic
- Lemon juice
- Salt
METHOD:
Cut avocados in half and deseed. You need to use very ripe avocados for this recipe.
Carefully scoop the avocado halves out well. Make sure the skin stays intact as they will form the egg moulds. Put the avocado flesh aside for the avocado toast topping.
To make the vegan egg whites add 300g silken tofu to a blender, together with 300ml unsweetened soy milk, 4 tbsp nutritional yeast (nooch), 2 tbsp olive oil, 2 heaped tbsp agar agar powder (I bought mine on Amazon), 1 tsp kala namak salt (also called black salt). Blend.
Pour the mixture into a pan, stir well and cook for 5 minutes on high to medium heat.
Then spoon egg white the mixture into the avocado skins. transfer them to a fridge and let chill for 30 minutes for them to set.
In the meantime make the vegan egg yolk.
To a blender add 50g of silken tofu, 1 1/2 tsp polenta, 1/2 cup of water, 1 1/2 tbsp nutritional yeast, 2 tbsp olive oil, 3/4 tsp of turmeric, 1/2 tsp kala namak salt, 1/4 tsp or less garlic powder.
Blend for 1 minute, it needs to be as smooth as possible.
Pour into a pan and stir and cook for roughly 5-10 minutes or until it thickens. Turmeric give the vegan egg yolk a very intense yellow colour. If you want to make the egg yolk look even more natural you can add a tiny bit of tomato paste to it - not for taste, just for colour (optional).
Take your vegan eggs out of the fridge - check if they have set. Peel them and carve out a hole, big enough for the egg yolk. To be honest the yolk always used to be my favourite to now you can choose yourself how much yolk you would like to have! ;-)
Spoon the vegan egg yolk into the eggs.
To make the avocado toast, small the avocado flesh, add some lemon juice, garlic and salt and mix together.
Serve on toasted bread and if you like also add some dill for decoration. Enjoy!
