Vegan coleslaw with sunflower seed dressing
Dairy-free and ready in 10 minutes for your summer party!
- 1/3 medium sized cabbage (red or white)
- 2 medium to large sized carrots
Sunflower seed dressing ingredients:
- 3/4 cup sunflower seeds
- 1 cup of water
- Juice of half a lemon
- 1 tsp salt
- 2 tsp extra virgin olive oil
- 2 tsp Dijon mustard
- 2 tsp apple cider vinegar
Peel the carrots and grate them. Then finely cut up the coleslaw. Put all sunflower seed ingredients into a small powerful blender and blend until you get a smooth dressing. You might have to add a little bit more water, depending on your blender. Put the carrots, coleslaw and the dressing into a large bowl and mix together. Do a taste test and if necessary add a bit more salt and vinegar.
