Walnut olive and artichoke spread

When I ran out of hummus I was looking around for what I had in the cupboard so and came up with this quick and easy recipe. Very healthy, high in omega 3 and done in less than 5 minutes.

INGREDIENTS:

  • A handful of mixed deseeded olives
  • A handful of chargrilled artichokes in oil
  • A handful of walnuts
  • Some salt and pepper to taste
  • 1 tsp lemon juice
  • 2 tsp Dijon mustard

METHOD:

Put all ingredients into a food processor and blend together. You might have to add a bit of water for it to blend better. Serve with tomato or other sliced veggies on top. Enjoy!
